Quinoa, Rocket & Herb Super Salad

A delicious, crunchy salad with lots of fresh herby flavours that is a nutritious, high-protein meal all by itself.

Nutritious, high protein salad

Ingredients: 

  • 250g of Quinoa
  • 100g Rocket
  • 20g Fresh Basil
  • 20g Fresh Parsley
  • 20g Fresh Mint
  • Juice of 1 Lemon
  • Sea Salt
  • 8 tbsps Olive Oil
  • 2 Garlic Cloves
  • Handful of Pistachio Nuts and Mixed Seeds
(Generously Serves 2 as a main dish)

Method:

Quinoa: Bring a large pan of salted water to the boil. Meanwhile thoroughly rinse the quinoa in a fine sieve and allow to drain. When the water reaches boiling point, add the quinoa and simmer for 12 minutes on a medium heat until the grains develop a small spiral tail and have become tender. Drain and set aside for 10 minutes to cool and become light and fluffy.

Herb Dressing: Combine the fresh herbs, garlic, salt, lemon juice and olive oil and blend in a food processor until you have a smooth herby dressing.

Toasted Seeds: The seeds are best toasted lightly in a heavy frying pan for around 1 minute. 

Rocket: Rinse and dry the rocket and chop finely.

Once you have all the individual parts prepared, simply throw them all in a large mixing bowl together and mix gently with your hands. Serve immediately with a further drizzle of olive oil and a handful of shelled pistachios to garnish.
