Guacamole
One of our staples. A perfect accompaniment to a Mexican meal of Spicy Black Beans and Rice or as a snack with a few tortilla chips. Fresh, creamy and delicious!

Ingredients:
- 2 Large Ripe Avocados
- 2 Tomatoes - finely chopped
- 4 Spring Onions - finely chopped
- 2 Garlic Cloves - crushed
- Juice of 2 Limes
- 1 Red Chilli - finely chopped (But only if you like it a little spicy!)
- 1/2 Tsp Sea Salt
Method:
- Combine the lime juice, garlic, tomatoes, chilli and spring onions in a large mixing bowl and allow to marinate.
- Halve and de-stone the avocados, then remove the flesh by using a sharp knife to first score a dice pattern in the flesh then scooping it out with a spoon. Add this to the other ingredients.
- Next add the salt and give it a wee smoosh together with the back of a fork.
- Serve immediately.
